Ingredients needed to make fajitas with portobello mushrooms.
- Portobello Mushrooms. You can prepare your mushrooms by using a paper or clean kitchen towel to wipe the dirt off and then remove the stems and use a spoon to scoop out the gills from the underside. Then slice the mushrooms into quarter inch thick slices.
- Red Bell Pepper, Yellow Bell Pepper, and Green Bell Pepper. Rinse and dry your peppers and then remove the stems and seeds. Slice the peppers into strips about a third of an inch wide.
- Onion. Sliced into strips.
- Olive Oil.
- Fajita Seasoning- chili flakes, cayenne pepper, garlic powder, ground cumin, smoked paprika, salt, and pepper.

Tips for making the best fajitas.
You can make your mushrooms even tastier by marinating them for as little as a half hour. Simply whisk together your fajita seasoning with half of the olive oil and then toss the mixture with your sliced mushrooms (in a bowl or zip top bag).

- Using a cast iron skillet can make this recipe even more authentic. Your cooking time may differ from a regular skillet so it is best to keep a good eye on your fajitas while they cook.
- I always seem to have a supply of multi-colored peppers on hand which makes making this recipe even easier but, you can use the pepper(s) of your choice. For a bit of heat you can slice up a poblano pepper .
- For fully vegan fajitas, use vegan tortillas as some are made with animal byproducts.

How to make Portobello Mushroom Fajitas
Prep Time: 5 minutes .
Cook Time: 12 minutes.

- Start by preparing your ingredients as indicated. Slice your mushrooms, peppers, and onion and whisk together the fajita seasoning in a small bowl.
- Heat your olive oil in a large skillet on medium heat for one minute. Then add the peppers and onions and cook for four to five minutes or until the peppers have softened and the onion is translucent (stirring occasionally for the ingredients to evenly cook).
- Add the sliced mushrooms to your skillet and use heat-proof spatula or similar item to fold them into the other ingredients. Cook the ingredients until the mushrooms are soft with some browning (about five to seven minutes).
- Add half of your seasoning to the skillet and stir the ingredients. Then repeat this step with the remaining seasoning so that all of the ingredients are covered with your seasonings. Cook for another minute and then remove the fajitas from the heat.
Expert Tip 👉 This recipe can be made on a rimmed sheet pan in the oven. Simple combine your ingredients and bake at 450, stirring and flipping as needed, for 16-18 minutes or until done.
How to store fajitas.
Once your fajitas have fully cooled they should be stored in an airtight container. When properly stored and refrigerated, these fajitas should keep for about four to five days.
