Tips for making the best fajitas.

You can make your mushrooms even tastier by marinating them for as little as a half hour. Simply whisk together your fajita seasoning with half of the olive oil and then toss the mixture with your sliced mushrooms (in a bowl or zip top bag).

    More helpful tips for you.

    1. Using a cast iron skillet can make this recipe even more authentic. Your cooking time may differ from a regular skillet so it is best to keep a good eye on your fajitas while they cook.
    2. I always seem to have a supply of multi-colored peppers on hand which makes making this recipe even easier but, you can use the pepper(s) of your choice. For a bit of heat you can slice up a poblano pepper .
    3. For fully vegan fajitas, use vegan tortillas as some are made with animal byproducts.
    4. Add a bit of protein to your fajitas such as firm tofu, vegan meat or chicken, or shrimp (non-vegan).
    5. My fajitas were topped with fresh lime juice just before serving. This is optional but, can add a nice balance to the flavors in your fajitas.
    6. Lastly, no matter what kind of tortillas your use, steaming or warming them up first can make them more soft and pliable for making a great meal!
