    When combined with sweet potatoes and fresh vegetables, the miso paste creates a rich and flavorful soup that is perfect as a meal or as a side dish.

    This recipe is made with vegetable broth and water. Feel free to substitute coconut milk for part of the broth or water to thicken this soup up and make it even more hardy.

    1. This soup is flavored with the delicious vegetables that are added to it. You can make your soup even more authentic by added a bit of Togarashi seasoning to yours.
    2. The Miso paste is an important flavor element in this recipe. Using white miso is suggested for a more mild flavor while yellow miso is for anyone looking for something a bit more robust.
    3. Blending the soup can be easily done using an immersion blender. If you do not have one, wait until your soup has cooled off and run it through a regular blender. You may have to do this in batches however.

    Ingredients to make vegan sweet potato soup.

    • Oil Use a neutral oil such as vegetable oil.
    • Celery. Your celery should be chopped small.
    • Onion. Yellow onion works best. Your onion should be diced small.
    • Carrots. The carrots should peeled, roots removed, and then diced small.
    • Garlic. Minced or diced small works best in the recipe.
    • Ground Ginger. While fresh ginger is preferred, you could alternatively use the ground ginger from a jar.
    • Sweet Potatoes. Peel the sweet potatoes and then dice them up small (½-3/4").
    • Vegetable Broth. To make this a vegan recipe, use a vegan vegetable broth.
    • Water. The water can be switched out with coconut milk for a thicker consistency.
    • Miso Paste. You can use the miso paste of your choices.
    • Seasonings. You can add salt, pepper, or seasonal choices such as fall spices as desired.

    Expert Tip👉 Save time by using pre-cubed sweet potatoes. You can find this in the freezer section of most grocery stores.

    How to make Sweet Potato Soup with Miso

    Prep Time:
    Prep Time: 10 minutes
    Cook Time: 40 minutes
    Servings: 6.

    • Use a large heavy bottom pot such as a Dutch oven for best results. Heat the oil in your pot on medium heat for two minutes.
    • Add the prepared celery, onion, carrots, and garlic to the pot and cook the ingredients, stirring occasionally as needed, until the onion turns translucent (about four and a half to five minutes).
    • Stir in the diced sweet potatoes and top the ingredients with the ground ginger, cooking for about a minute .
    • Next, add the broth along with the water. Stir the ingredients and then turn down the heat to medium low and cover and cook the ingredients until the vegetables are soft (about a half hour).
    • Once the vegetables have softened you can stir in the miso past and seasonings.
    • Remove the soup from the heat and carefully use an immersion blender on pulse setting to blend the ingredients together. If the soup is too hot, you can wait until it has cooled to a warm temperature that you can work with.
    • Taste the soup and make adjustments as desired using seasonings.

    Expert Tip👉 You can freeze the soup for later. To do so, first allow the soup to fully cool before transferring it to an airtight container. The soup will keep for up to the months in the freezer if properly stored.

    Ingredients

    • 2 tbso Neutral Oil
