How to make Sweet Potato Soup with Miso
Prep Time:

Cook Time: 40 minutes
Servings: 6.
- Use a large heavy bottom pot such as a Dutch oven for best results. Heat the oil in your pot on medium heat for two minutes.
- Add the prepared celery, onion, carrots, and garlic to the pot and cook the ingredients, stirring occasionally as needed, until the onion turns translucent (about four and a half to five minutes).
- Stir in the diced sweet potatoes and top the ingredients with the ground ginger, cooking for about a minute .
- Next, add the broth along with the water. Stir the ingredients and then turn down the heat to medium low and cover and cook the ingredients until the vegetables are soft (about a half hour).
- Once the vegetables have softened you can stir in the miso past and seasonings.
- Remove the soup from the heat and carefully use an immersion blender on pulse setting to blend the ingredients together. If the soup is too hot, you can wait until it has cooled to a warm temperature that you can work with.
- Taste the soup and make adjustments as desired using seasonings.
Expert Tip👉 You can freeze the soup for later. To do so, first allow the soup to fully cool before transferring it to an airtight container. The soup will keep for up to the months in the freezer if properly stored.
