This recipe for stir fry is full of vegetables and flavor.
It is also friendly to many diets including the vegan, low calorie, and Mediterranean diets.
You can make this recipe using a regular skillet.
However, a wok is usually used for making a stir fry.
Feel free to adjust the ingredients as needed to your preferences.
Ingredients needed to make Stir Fry with Shirataki Noodles
- Olive oil- 3 tablespoons.
- Garlic- 2 cloves diced or sliced.
- Yellow Onion-½ cup chopped. That is about one average sized onion.
- Carrot- ⅓ cup sliced or chopped.
- Yellow Bell Pepper- 1. This pepper should be rinsed, sliced, and have the seeds removed.
- Red Bell Pepper- 1. Also rinsed, sliced, and with the seeds removed.
- Broccoli- 1 medium head. The broccoli should be rinsed and broken into florets.
- Mushrooms- 2 cups. I like a baby bell for this recipe.
- Shirataki Noodles- 1 (14oz) package. The noodles should be rinsed and drained.
- Soy Sauce- 2 tablespoons. You can use a lower salt version.
- Seasonings as desired.
Vegetable Stir Fry with Shirataki Noodles
- Preheat your skillet or wok on medium heat with the olive oil for two minutes. Then add the minced garlic and cook for one minutes, stirring with a wooden spoon if possible, before adding the onion. Cook this for another minutes, stirring as needed.
- Add the carrots to the skillet and cook until soft (about three minutes) before adding the broccoli, peppers and mushrooms. Cook until the broccoli and peppers are soft (about five minutes) stirring as needed.
- Turn the heat down to low and stir in the noodles, cooking for another two minutes. Remove the ingredients from the heat and stir in the soy sauce and any desired seasonings before serving.
