The ingredient adjustment for either diet is simple.

Ingredient needed to make this recipe for guacamole tortilla wrap.
- Guacamole- 1 cup (give or take as desired). You can use your own recipe, purchased guacamole, or the simple recipe that I have provided above.
- Tortillas- 4 large. Flour tortillas work best in this recipe. However, you can use a low carb tortilla or gluten free tortillas.
- Black Beans- ½ cup cooked. Hate black beans? You can omit this 🙂 .
- Mozzarella Cheese- 1 ½ cups. You can find vegan mozzarella cheese here.
- Spray oil- as needed.
- Olive Oil- 1 tablespoon or as needed. Yes, you can sub in another similar oil such as canola.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
How to make Guacamole Quesadillas
- Prepare your guacamole as desired or use already made guacamole.
- On a large flat surface such as a cutting board, lay out the first two tortillas. Top the tortillas with the black beans and then the cheese, Be sure to spread these ingredients evenly, leaving about ¼- ½" around the edges. Then place the remaining tortillas on top of the prepared tortillas and pinch the edges together to seal. Spray the top tortilla gently with the spray oil and add any optional seasonings.
- In a large skillet, heat the oil on medium heat. Place one of the prepared tortillas in the heated skillet and cook for about three minutes. Flip the quesadilla over, spray season as desired, and cook until golden, about another three to four minutes. Repeat with the second prepared tortilla/quesadilla.
- Allow this to cool a bit before serving or cutting into slices. Serve as desired.
