Also, you can eat guacamole as is or serve it as a dip or even part of another recipe such as this one.

To make your own simple guacamole simply mash together the following ingredients.

  • Avocados- 3 peeled, pits removed, and mashed.
  • Lime Juice- 2 tablespoons (fresh preferred).
  • Onion- ¼ diced (about ½ cup).
  • Garlic- 1 teaspoon minced.
  • Seasonings as desired.

To do so simply assemble the quesadillas, spray them with a bit of oil, quarter them, and bake them on a prepped baking sheet at 350 for 10-12 minutes (or until golden), flipping halfway through.

Here are some more great tips for you.

  1. This recipe for quesadillas can be made low in carbohydrates. To make this keto low carb, simply use low carb tortillas and make sure that your other ingredients, such as the guacamole, are also low carb.
  2. Here is how to make this a vegan recipe. Omit the mozzarella cheese and use an alternative such as vegan mozzarella cheese or even my vegan beer cheese queso.
  3. Feel free to personalize this recipe. You can personalize this by using seasonings, adding other ingredients such as chicken, mushrooms, or peppers.

Here is what to serve with Quesadilla

If you plane on making this recipe as a sandwich for lunch or dinner, a side salad or small bowl of fruit sounds good. However, as a side to something else, this recipe would be nice to serve with a large bowl of soup.
Guacamole Quesadillas can be topped or served with some favorites.
I like the idea of topping this with a sauce such as my Garlic aioli or vegan mayonnaise. Hummus would also be nice with this recipe.

This tortilla guacamole recipe can also be made in an air fryer.

To do so, simply assemble the tortilla and spray the outside with a bit of oil.

Then air fry for eight to ten minutes are 350 or until golden, flipping midway through air frying.

Easy Guacamole Quesadilla Recipe.

As mentioned, this recipe can be made in an air fryer or oven in addition to how I am presenting it in this recipe. I have shared the instructions on how to do so above.

Also mentioned is that this recipe can be made vegan or low in carbohydrates.
The ingredient adjustment for either diet is simple.
They have been provided above in the tips section of this article.

Ingredient needed to make this recipe for guacamole tortilla wrap.

  • Guacamole- 1 cup (give or take as desired). You can use your own recipe, purchased guacamole, or the simple recipe that I have provided above.
  • Tortillas- 4 large. Flour tortillas work best in this recipe. However, you can use a low carb tortilla or gluten free tortillas.
  • Black Beans- ½ cup cooked. Hate black beans? You can omit this 🙂 .
  • Mozzarella Cheese- 1 ½ cups. You can find vegan mozzarella cheese here.
  • Spray oil– as needed.
  • Olive Oil– 1 tablespoon or as needed. Yes, you can sub in another similar oil such as canola.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

How to make Guacamole Quesadillas

  • Prepare your guacamole as desired or use already made guacamole.
  • On a large flat surface such as a cutting board, lay out the first two tortillas. Top the tortillas with the black beans and then the cheese, Be sure to spread these ingredients evenly, leaving about ¼- ½″ around the edges. Then place the remaining tortillas on top of the prepared tortillas and pinch the edges together to seal. Spray the top tortilla gently with the spray oil and add any optional seasonings.
  • In a large skillet, heat the oil on medium heat. Place one of the prepared tortillas in the heated skillet and cook for about three minutes. Flip the quesadilla over, spray season as desired, and cook until golden, about another three to four minutes. Repeat with the second prepared tortilla/quesadilla.
  • Allow this to cool a bit before serving or cutting into slices. Serve as desired.
