    Portobello mushrooms are a large and meaty mushroom.
    On their own, these mushrooms are flavorful yet, also go with about anything that they are served with.

     
    This recipe takes those basic Portobello mushrooms to another level.
     
    This is because we are marinating the mushroom in a special sauce.
    The sauce is similar to barbecue marinades that you may already be used to.
     

    How to select Portobello mushrooms.

    Because the mushrooms used in this recipe will be marinated, it is important that you select sturdy mushrooms to use.
    Also, because these mushrooms will be turned into burgers, you want them to have a good size to them.
     
    Here is what to look for when shopping for the mushrooms.
    Use mushrooms that are similar in size.
    The caps of the mushrooms should be spot-free and dry rather than wet.

    Tips for making Portobello burgers.

    While this recipe is for grilled burgers, you could make them using an alternative method of cooking.
    Indoor grilling is one way that I have made these burgers.

     
    Here are some more great tips for you.

     

    1. Make sure that the ingredients that you are using in this recipe are indeed vegan. You can find vegan soy sauce here and vegan Worcestershire sauce here.
    2. These mushrooms need to be marinated for 30 minutes to absorb the full flavor of the ingredients. To ensure that they are flavorful, you can flip them over once or twice and spoon the marinade over them.
    3. While this recipe is for making 'traditional' burgers, you can alter things a bit. We often place our burgers in wraps for example.

     

    How to make vegan Pesto Mayonnaise

    The pesto mayonnaise is an alternative mayo that can be used in this recipe.
    Simply spread this mayonnaise on your bun as you would for a normal burger.,

    To make the vegan pesto mayonnaise, blend the ingredients until smooth in a blender or food processor.

    • Vegan Mayonnaise- ⅓ cup.
    • Walnuts- ⅓ cup. You can sub in pecans or pine nuts.
    • Fresh Basil Leaves- 1 cup packed. .
    • Nutritional Yeast- 1 tablespoon.
    • Garlic- 2 cloves.
    • Olive Oil- 2 tablespoons.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

     

    How to store leftover burgers.

    These burgers are really best when eaten fresh.
    However, you could store yours in an airtight container or plastic bag in your refrigerator for a few days if needed.

    How to prepare Portobello mushrooms for this recipe.

    Start by cleaning off the mushrooms.
    Use a paper towel or clean dish towel to wipe the dirt off the tops of the mushrooms.

    Then scoop out the gills if your prefer to remove them.
    Use a spoon to scoop out the ‘gills’.
    Also, remove the stems before marinating the mushrooms.

    Ingredients needed to make these burgers.

    • For the marinade: Balsamic Vinegar- 1 tablespoon.
    • Soy Sauce- 1 tablespoon. You can find vegan soy sauce here .
    • Worcestershire sauce - 1 tablespoon. You can find vegan Worcestershire sauce here.
    • Olive Oil- ½ tablespoon.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

    The remaining ingredients needed.

  • Portobello Mushrooms- 4 large. Try to select mushrooms that are similar to the size of the buns that you are using.
  • Hamburger Buns- 4. Alternatives to buns include wraps, English muffins, or even rolls.
  • Onions- 2. Slice the onions thin as we will be carnalizing them.
  • Tomato- 1 large (like a beefsteak).
  • Olive Oil- 2 tablespoons.
  • Vegan Pesto Mayonnaise (recipe above).

    How to make this recipe for Marinated Portobello Mushroom Burgers.

     

    • Prepare the mushrooms as indicated above.
    • Whisk together the marinade ingredients listed above. Pour half of the marinade in a shallow baking dish. Place the mushrooms cap sized down in the dish and then cover with the remaining marinade. Allow the mushrooms to soak up the marinade for about 30 minutes.
    • In a large skillet on medium heat, warm the two tablespoons of olive oil for a minute. Then add the sliced onions and cook the onions until brown, stirring occasionally to evenly brown them.
    • Preheat the grill to a medium high heat. You can prep the grates with oil. Grill the mushrooms for six to eight minutes on each side or until tender, brushing with marinade as needed to keep them moist.
    • To assemble the burgers, spread the pesto mayonnaise on the bun. Place a mushroom on top of the bottom bun and then top with a sliced tomato and other ingredients as desired before adding the top bun.
