    Freshly grated cauliflower can be a bit soggy. I like to place mine on a stack of paper towels or clean dish towel for 20 minutes or so to help drain the water from the cauliflower.

    1. Make this recipe even more flavorful. You can roast the cauliflower first, add a bit of lime juice, or toss in some slivered almonds to up the flavor of this rice recipe!
    2. Using a food processor to grate the cauliflower is really an easy way to make the rice. You may find this easier to do however if you break the cauliflower into florets first.
    3. If you are in a bind for time, you can try using pre-grated cauliflower rice instead of grating your own. I suggest that you use rice that is thawed and has no added ingredients in it.

    About this simple Garlic Cauliflower Rice recipe.

    This is simple yet, delicious vegan recipe that is an alternative to regular rice.
    There are just five ingredients in addition to seasonings in this recipe.

    To make this recipe you will need grated cauliflower that resembles rice.

    You can easily grate your own cauliflower to make this or purchase already grated cauliflower.
    To make this recipe we will first saute the garlic before adding the cauliflower and seasonings to the pan.

    Ingredients needed to make garlic cauliflower rice.

    • Cauliflower. The cauliflower should be grated and drained if needed.
    • Garlic. The garlic should be minced or chopped.
    • Olive Oil. While the flavor of olive oil is perfect for this recipe, you can use a similar oil such as vegetable oil.
    • Shallots. Alternatively, you can use a green or yellow onion, adjusting as needed for flavor.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
    • Lemon Juice. Freshly squeezed lemon juice is preferred.

    How to make Easy Healthy Garlic Cauliflower Rice.

    • If your cauliflower is not yet grated, do so by removing the stem and leaves before breaking down the head into florets. Place the florets in a food processor (batches may be needed) and pulse until you reach your desired consistency. Note that you may need to stop the processor as needed to scrape down the sides.
    • Allow the cauliflower to sit on a stack of clean paper towels or kitchen towel. Meanwhile, heat a skillet with the olive oil on medium heat. Add the garlic and sauté until the garlic becomes fragrant (about two minutes.)
    • Add the shallots (or onions) to the skillet and saute for another minute or until softened.
    • Now, stir in the riced cauliflower along with any seasonings (you can add additional seasonings later if needed). Cook the cauliflower until it turns golden brown (seven to eight minutes).
    • Remove the cauliflower mixture from the heat and stir in the lemon juice along with any additional seasonings as desired.
