    Ingredients needed to make Healthy Homemade Spinach Pancakes


    • Flour. All purpose flour was used to make my pancakes. You can use an alternative that measures like all purpose flour, taking into consideration any needs for a binder.
    • Baking Powder. Make sure that your baking powder is fresh for best results.
    • Milk. For a richer pancake you can use buttermilk and for a vegan pancake, you can use a plant based milk.
    • Spinach. Your spinach should be clean and dry before packing it into a measuring cup.
    • Oil. Use a neutral oil such as canola oil.
    • Egg. Your egg should be at room temperature before adding it to this recipe. A mashed banana can be used for a vegan pancake.
    • Sugar. A sugar alternative that measures like sugar and that can be heated can be used instead. Maple syrup can be used but, you will need slightly less (about ¾ of a tablespoon).

    Expert Tip👉 Chop your spinach before adding it this recipe. This will make it easier to blend it with the other ingredients.

    • Add the oil, egg, and sugar to the blender and blend until combined. Then add the dry ingredients from the bowl to the blender and blend until just combined.
    • Prep your griddle or pan for nonstick if needed and heat it on medium heat.
    • When the griddle or pan is ready, pour one to two tablespoons (depending on how large you want your pancakes to be) of the pancake mix on the pan/griddle.
    • When you see bubbles forming on the pancake and the edges start to turn golden you can flip the pancake over and continue to cook until the pancake is fully cooked through.

    Expert Tip👉 To test your griddle or pan to determine if it is ready to make the pancakes, simple place a few drops of water on it. If the drops sizzle and dissolve quickly, your griddle or pan is ready for the pancakes.
