Chicken Provençal is a popular French dish that features classic Mediterranean flavors. The chicken is first cooked alone and then topped with the other ingredients for the perfect marriage of flavors, textures, and colors.
Known for its classic Mediterranean ingredients, this chicken is full of hearty flavor.
Commonly made with chicken thighs that are first browned to a light crisp, this dish can really be made with any part of the chicken, including chicken breast. The browned chicken is then topped with a a mixture of tomatoes, garlic, olives and seasonings.
Tips for making the best chicken breast provencal.
Using a cast iron skillet allows the chicken to get crisp on the outside while holding its juicy moisture on the inside. If you do not have a cast iron skillet, the heavy well-made skillet can be used.
Here are some more great tips for you.
- Boneless and skinless chicken breasts are used to make this recipe. To get them into a uniform thickness, you can use poultry mallet to pound them (it's easy!).
- White wine is an essential ingredients used to help tenderize the chicken to add a flavor balance. While the alcohol should burn off leaving a nice flavor, you can alternatively use a similar acidic liquid such as white vinegar or apple cider vinegar.
- All purpose flour is used to help the chicken skin get crisp. To make this recipe even more Mediterranean diet friendly, you can use a whole wheat all purpose flour.
How to store leftover chicken.
This recipe is really best when served fresh however, once the leftover chicken has cooled to room temperature it should be stored in an airtight container. When properly stored and refrigerated, this chicken should keep for up to a few days.

- Serve this recipe as is with a glass of white wine or infused mineral water on the side.

Ingredients to make homemade chicken Provencal.
- Chicken Breast. Boneless and skinless chicken breast that was pounded lightly into uniform thickness was used to make my chicken.
- Flour. Any kind of all purpose flour us used to coat the chicken breast to make them crisp.
- Olive Oil. This is used to coat the skillet with before browning the chicken.
- Garlic. Use freshly minced garlic if possible.
- White Wine. A dry white wine works nicely however, any white wine should work.
- Diced Tomatoes. Make this recipe even easier by using a can of diced tomatoes with the juice intact.
- Kalamata Olives The olives should be sliced in half lengthwise.
- Optional- seasonings to taste and chopped parsley (salt and pepper used to make mine).
Expert Tip👉 To pound your chicken, first place each breast into a plastic zip top bag and remove the air before sealing it. Lightly pound the chicken to a thickness of about a quarter to a half inch in thickness for this recipe.
How to make Mediterranean Diet Chicken Breast Provencal
Prep: 10 minutes.
Bake Time:15 minutes.
Yield: 6 servings.
- Start by preparing your chicken if it has not been prepared it. For even and quick cooking, the chicken should be even thickness.
- In a shallow bowl that will be used for dredging, place the flour and seasonings. Then dredge each piece of chicken through the flour to coat the chicken, tapping off the excess flour as needed.
- Heat a large cast iron skillet on medium high heat for one minute. Add the oil to the skillet and carefully swirl the skillet around as needed to coat the entire skillet with the oil.
- Once the skillet has been coated with the oil, place the chicken into the skillet leaving space between the chicken. Cook the chicken until lightly browned on the bottom and then flip the chicken over and cook the bottom (which had been on top) until browned. It should take between three and four minutes for each side of the chicken to brown.
- Add the garlic and cook for one minute and then add the white wine and diced tomatoes with liquid. Bring this to a boil and then reduce the heat to low to low medium and cook for five more minutes.
- You can then stir in the olives and cook for another minutes before removing the skillet from the heat.
Expert Tip👉 Not a fan of skinless chicken breasts? Bone-in, skin-on chicken breasts can alternatively be used and you won't have to pound them. The skin will keep the chicken more moist. Cooking times may vary.
