    Once the crackers have fully cooled you should store them in an airtight container or sealed plastic bag. If properly stored at room temperature, these crackers should last about a week. Freezing or refrigerating these crackers can introduce moisture.

    This tasty cracker recipe is also vegan, soy free, and nut free.
    It is also a perfect idea for a snack or appetizer.

    After the crackers have been baked and cooled, they can be enjoyed with a favorite dip, hummus, or alone.

    • Whole wheat flour. As mentioned, while whole wheat flour is a preferred choice for the Mediterranean diet, any flour will do as long as it measures like whole wheat flour.
    • Baking powder. This will give the crackers a bit of height to make them better for dipping.
    • Olive Oil. This gives the crackers a great flavor as well as a touch of moisture.
    • Water. The water should be cool water.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

    How to make Mediterranean Diet Olive Oil Crackers.


    • Start by preheating your oven to 450. Also place a sheet of parchment paper (about the size of your baking sheet) on a flat work space.
    • In a large mixing bowl, combine together the dry ingredients using a fork or whisk. Go easy on the seasonings as you can add more later.
    • Once the ingredients are combined you can make a well in the center using a large spoon or whatever works best for you. Add the olive oil and the water to the well and then stir the ingredients until the dough comes together and starts pulling away from the sides of the bowl.
    • Turn the dough out onto a clean and dry work surface (use a mat if needed). Knead your dough about five to seven times or until the dough is smooth (there should be no pale streaks left).
      Cut the dough into four equal portions.
    • Starting with the first portion, place the dough on to the parchment paper that you prepared in the first step. Place another piece of parchment paper over the dough and roll the dough out very thin (about ⅛”).
    • Remove the top sheet parchment paper and then lightly score the sheet (do not cut all the way through). You can top the crackers with additional seasoning as desired.
    • Transfer the parchment paper and prepared crackers to the baking sheet and bake for 6-7 minutes or until the crackers begin to brown.
    • Repeat this process with the remaining dough.
    • Allow the crackers to fully cool before serving.

    Expert Tip👉 It is normal for the to be very oily after it has been kneaded You do not need to add any additional flour.
    Also, I like to preheat my baking sheet as this will help the crackers get crisp. Take precautions as needed however, as the sheet will be warm when we place the cracker dough onto it.
