    Vegan Oatmeal and Apple Cookies

These cookies have that warm cinnamon flavor that, combined with sweet apples, makes you feel at home on a fall day.
I like that these cookies have crunchy edges with a soft center and are proudly vegan!

Did you try my recipe for Vegan Carrot Cake Sandwich Cookies?

That vegan cookie recipe is a delicious sandwich cookie made with all vegan ingredients.

This cookie is really about the apples and the oatmeal and how they taste together.

Confused about which vegan milk is the best to use in your recipe?
Here is what you need to know about choosing the right vegan milk..

This recipe for vegan oatmeal cookies is perfect for anyone asking what to do with old apples.

I know about this because I am someone who loves to go apple picking in the late summer and fall.
As a result, I tend to have a lot of apples that need to go into recipes.

Apples are a great source for fiber.

However, what I really like about apples is the smell throughout my house when they are baking in the oven. Apples and oatmeal in the oven are a perfect match!

People ask whats a good baking apple.

To make this recipe, I suggest using a good baking apple. Baking apples are able to hold up to the heat from the oven, making them perfect for a recipe such as this one.

Baking apples tend to be more firm which is essential when making anything with baked apples.

Good choices for baking apples that would work in this recipe include Fuji, Gala, Honey Gold, Jonathan, and Granny Smith (can be cooked or baked). I sometimes like to use two different kinds of apples to make the flavor of the cake even more interesting.

Tips for making apple oatmeal cookies

This recipe calls for oat flour. If you do not have oat flour on hand, you can simple use a food processor or good blender to grind up rolled oats into flour.

Here are some more great tips for you.

    1. Rolled oats are used in the ingredients in this recipe because they yield a crunchier bite. Feel free to use a quick oats if you are wanting a softer cookie.
    2. The easiest way to drop or place the cookies on the baking sheet is to use tow spoons. One spoon used for scooping the dough and the other used to scoop the dough from the first spoon on to the baking sheet.
    3. While this recipe is for apple and oatmeal cookies, you can easily use a similar fruit instead. I like pears or carrots in this cookie for example.

How to personalize these vegan oatmeal cookies.

My favorite way to personalize about anything with baked apples is to use two different kinds of apples. Using two kinds of apples really help make the flavor of the cookies even better.

Here are some more ways to personalize these cookies.

    • Swap out the coconut oil with a vegan nut butter such as peanut butter.
    • Add a tablespoon or two of raisins.
    • Instead of brown sugar, make these cookies lower in sugar using a brown sugar alternative.
    • Add some chopped nuts such as walnuts.

How to store vegan oatmeal and apple cookies

These cookies should be stored in an airtight container. They should keep for up to three days in a cool pantry or up to two months frozen

    Vegan Oatmeal and Apple Cookies

Here is how to prepare apples for this recipe.

Using a baking apple is a good idea as baking apples are able to stand up to baking in the oven better than the apples that are meant for simply enjoying. Baking apples include Honeycrisp, Granny Smith, Gala and Golden Delicious (there are a few more out there too).

Wash the apples in cool water and then dry them with a clean towel.

Use a vegetable peeler or apple peeler to remove the skin and then use an apple corer to remove the core. Then slice the apples into chunks or slices.

Ingredients needed to make this recipe for apple flax oatmeal cookies

    • Flax Egg: One tablespoon flaxseed meal plus three tablespoons of water. Or you can use the egg replacement of your choice.
    • Oat Flour- ½ cup.
    • Rolled Oats- 1 cup.
    • All Purpose Flour- ž cup.
    • Cinnamon- 1 teaspoon.
    • Nutmeg- Âź teaspoon.
    • Coconut Oil- ⅓ cup melted.
    • Brown Sugar- ž cup.
    • Vanilla Extract- 1 teaspoon.
    • Apples- 1 cup peeled, cored, and diced.

How to make these Vegan Oatmeal and Apple Cookies.

    • Preheat your oven to 350 and prep a baking sheet for nonstick. I like to use parchment paper.
    • Next, prepare the flaxseed egg by mixing together the flaxseed with the water. Set this aside.
    • In a medium mixing bowl, use a fork or a whisk to mix together the oat flour, oats, all purpose flour, cinnamon and nutmeg.
    • Next, in a mixing bowl, beat together the coconut oil and the brown sugar until creamy. Then add the dry ingredients along with the vanilla extract and combine until just blended. Fold in the diced apples.
    • Use two spoons to spoon the dough into 12-14 cookies, leaving two inches in between. The dough will be sticky due to the flaxseed but easy to work with.
    • Bake the cookies for 12 to 15 minutes or until they turn golden brown around the edges.
Then allow the cookies to cool on the baking sheet before transferring them.
